A favorite Recipe
German Pancake (serves 2)
1/2 cup flour
1/2 cup whole milk
2 T. butter
Pear slices, very thinly sliced with potato peeler Blueberries, optional powdered sugar maple syrup
1. Preheat oven to 450. Whisk eggs and milk together. Add flour and salt.
Stir just until blended. Batter will be slightly lumpy.
2. In a 12″ omelette pan WITHOUT non-stick coating, melt butter. Pour batter into the center of the pan as soon as the butter is frothy. Quickly transfer the pan to the oven.
3. Bake approximately 20 minutes until golden and puffed. Do not open the oven during the baking or the pancake will collapse.
4. Remove the pancake from the pan working very quickly before pancake deflates. Arrange pear slices in a pattern and sprinkle with powdered sugar.
5. Serve immediately.
